Haitian Djon Djon Rice
This recipe serves approximately 10 people
Ingredients
- 190 g of djon djon (dried mushrooms)
- 250 g of rice
- 600 ml of water
- 190 g of lima peas
- 1 green onion (shallot), sliced
- 1 medium onion, diced
- Cooking oil (sufficient quantity)
- 1 teaspoon of mashed garlic
- 1 chicken stock cube
- 1 cube of djon djon
- 1 1/4 teaspoons Haitian spice (all soaked)
- 1 Scotch Bonnet pepper
- 1 bouquet garni (thyme and parsley)
- Cloves (amount to taste)
1. Preparation of the djon djon
- In a pot, boil 190 g of djon djon in 600 ml of water for 30 to 45 minutes.
- Drain the mushrooms and reserve the cooking water. Set aside or discard the mushrooms.
2. Sauté the vegetables and herbs
- Heat cooking oil in a pot over medium heat.
- Add 190g of lima peas and sauté for 5 minutes .
- Stir in 1 medium diced onion and 1 green onion, sliced . Sauté for 1 minute .
Add 1 1/4 teaspoons of Haitian spice , 1 teaspoon of pureed garlic , 1 chicken bouillon cube , and 1 djon djon cube . Mix well.
3. Cooking the rice
- Pour the cooking water from the djon djon into the pot and bring to a boil over high heat.
- Season to taste if necessary.
- Rinse the rice in cold water and add it to the pot.
- Add 1 bouquet garni (thyme and parsley) and 1 Scotch Bonnet pepper studded with cloves .
- Reduce heat to low, cover tightly and cook for 25 to 30 minutes until the rice is cooked through.
4. Service
- Remove the chili pepper and bouquet garni before serving.
- Serve hot as a side dish or as a main course.
Advice
Adjust the spices and salt to your taste.
For a more intense flavor, leave the chili pepper whole while cooking.
