Haitian Djon Djon Rice

This recipe serves about 10 people
Ingredients
- 190 g djon djon (dried Haitian mushrooms)
- 250 g rice
- 600 ml water
- 190 g lima beans
- 1 green onion (scallion), sliced
- 1 medium onion, diced
- Cooking oil (as needed)
- 1 tsp garlic paste
- 1 chicken bouillon cube
- 1 djon djon bouillon cube
- 1 ¼ tsp Wouushh Épis
- 1 hot Scotch Bonnet pepper
- 1 bouquet garni (thyme and parsley)
- Cloves (to taste)
1. Preparing the djon djon
- In a pot, boil 190 g of djon djon in 600 ml of water for 30 to 45 minutes.
- Drain the mushrooms and reserve the cooking liquid. Set aside or discard the mushrooms.
2. Sauté the vegetables and aromatics
- Heat the cooking oil over medium heat in a pot.
- Add 190 g of lima beans and sauté for 5 minutes.
- Stir in 1 medium diced onion and 1 sliced green onion. Sauté for 1 minute.
- Add 1 ¼ tsp Wouushh Épis, 1 tsp garlic paste, 1 chicken bouillon cube and 1 djon djon cube. Mix well.
3. Cooking the rice
- Pour the djon djon cooking liquid into the pot and bring to a boil over high heat.
- Season to taste if needed.
- Rinse the rice in cold water and add to the pot.
- Add 1 bouquet garni (thyme and parsley) and 1 Scotch Bonnet pepper studded with cloves.
- Reduce to low heat, cover tightly, and cook for 25 to 30 minutes until the rice is fully cooked.
4. Serving
- Remove the pepper and bouquet garni before serving.
- Serve hot as a side dish or a main course.
Tips
Adjust spices and salt to taste.
For a more intense flavor, leave the pepper whole during cooking.
